The careful pruning of the feet of the vines, year after year, is revealed only when the heavy clusters of grapes have been harvested and lush leaves have fallen away. I’ve often seen the vintners in winter, bundled up against the cold wind, breaths shwing as they cut back the previous year’s growth. The dried prunings make terrific fuel for summer barbeques. They ignite quickly and burnt steadily and just long enough to grill your lunch or dinner.
